sweet pumpkin|金瓜莲子白木耳

This is a great dessert for everyone, even who is on diet. Pumpkin full of beta-carotene (antioxidant), aid in body detoxification and help in prevent cancer too. White fungus is source of collagen. It can take as main course (serve with some salad) too because it provide the satiety and sufficient of nutrients.


ingredients | 料
1/4 pumpkin (skin and seed off), 1/2 cup lotus seed, 1/2 bowl white fungus


procedure | 步
1. cook the pumpkin by steaming it, then set aside allowed to cool

2. add about 1500ml water into the pot, then cook the lotus seed. When lotus seeds are cooked, add in white fungus and boil for another 40 minutes

3. blend the pumpkin by using food processor to make puree

4. add the puree into the pot and mix thoroughly. If you find it is too thick, add some water and bring to boil.

5. Sugar in not necessary because pumpkin is a sweet squash at least you like it to be very sweet.

note: white fungus can cook with lotus seeds at the same time. I add in white fungus after lotus cooked because i love the crunchiness of the white fungus
